I took the recommendation to gently pull the cork through the wax rather than attempting to chip away at it with a knife, and it worked like a charm! This method was not only simple but also preserved the integrity of the wax.
Once I had the wine open, I decided to allow it to breathe a bit. Although decanting feels a bit excessive for a Pinot Grigio, I opted to pour it into a carafe an hour before serving. This choice proved to be beneficial; I had a bottle last year without letting it aerate, and the initial taste was rather harsh. Allowing the wine some time to breathe truly enhanced its flavor profile.
We enjoyed this lovely wine with a perfect backdrop of sunshine, friends, and a delicious pairing of ravioli and porchetta. It was an excellent match!
Now, regarding the wine itself—while I’m no sommelier and find it challenging to articulate flavors, I want to share my impressions. The taste was delightful: low acidity and velvety smoothness embodied by flavors of tart berries and hints of toasted bread.
